Chicken Slavaki (Chicken Souvlaki for dummies)

I adapted this recipe from a Chicken Souvlaki recipe in Cooking Light.  None of this Tahini Paste/Greek Yogurt stuff for me.  It’s one of my favorites.  You can’t mess it up!


6 tablespoons plain yogurt

2 Tablespoons grated cucumber

juice of 1 lemon

5 garlic cloves (minced)

1/2 cup olive oil

1 tsp dried oregano

1/2 tsp salt

1/2 tsp pepper

2 tblsp soy sauce

4 boneless skinless chicken breasts (cut into 1 inch pieces)

4 6-inch pita pockets

1/2 cup thinly sliced red onion

1 cucumber sliced

cherry or plum tomatoes (sliced)

1. Combine yogurt, grated cucumber, 3 cloves of garlic, and a little salt and pepper.

2. Combine lemon juice, olive oil, 2 garlic cloves, oregano, salt and pepper and soy sauce.  Stir chicken pieces into marinade.  Let sit 10 minutes. Thread chicken pieces onto a skewer. Broil on Hi (or grill if it isn’t 10 degrees outside) for approximately 10-14 minutes, turning once, until browned and cooked throughout.

3. Fill each pita half with a little onion, tomato, cucumber slices, cucumber sauce, and chicken.

    Did your children eat the lamballs?

      They loved them! Glad they enjoyed them since we will NEVER EAT THAT AGAIN!
